Lentil Salad and Herbs

Not everybody likes lentils and those who do prefer them in a soup. But, why not have variations and try something new? This time, the lentils are in a salad together with the tomato juice, the green herbs and the high quality olive oil.

Ingredients:

1 cup brown lentils
1/2 cup chopped parsley
1/4 packet spearmint
2 spoons chopped Chives
20-30 cherry Tomatoes cut in halves
Olive oil
Soup powder
Crushed black pepper
Salt

Preparation:

1. Soak the lentils for two hours before cooking.

2. Boil water, add one flat spoon of soup powder add the lentils and cook for half an hour; then filter the liquids from the lentils.

  1. 3. Mix all ingredients in a bowl, add oil and Season with salt and pepper.
