Marduma – Hot Cooked Tomato Salad
I like to serve a variety of salads to the table in the style of oriental restaurants. I don’t even touch the Pitas.
I sometimes ask myself who needs a main course afterwards?
Here is another hot cooked tomato salad with garlic.
10 medium-size tomatoes
1 hot pepper (the size is up to you)
3 big garlic cloves
1 tsp. sugar
1 tsp. salt
- 1. blanch tomatoes for 2 minutes in boiling water, filter and peel.
- 2. Chop tomatoes put in hot pan with oil, chop the garlic and the hot pepper and add.
- 3. Bring to boil and cook for 10 minutes, add sugar and spices and cook for 30 minutes on low fire, mixing occasionally.
