Marduma – Hot Cooked Tomato Salad

I like to serve a variety of salads to the table in the style of oriental restaurants. I don’t even touch the Pitas.
I sometimes ask myself who needs a main course afterwards?
Here is another hot cooked tomato salad with garlic.

Ingredients:

10 medium-size tomatoes
1 hot pepper (the size is up to you)
3 big garlic cloves
1 tsp. sugar
1 tsp. salt

Preparation:

  1. 1. blanch tomatoes for 2 minutes in boiling water, filter and peel.
  1. 2. Chop tomatoes put in hot pan with oil, chop the garlic and the hot pepper and add.
  1. 3. Bring to boil and cook for 10 minutes, add sugar and spices and cook for 30 minutes on low fire, mixing occasionally.
