Marinated EggPlant and Peppers
It is crazy Extremely tasty, You won’t know until you try it. The plate is emptied in no time and you will make it over and over again.
2 medium-sized egg-plants
2 red peppers cut into small pieces
1/4 packet of parsley thinly chopped
5 spoons vinegar
7 spoons water
2 tsp. sugar
1/2 tsp. salt
1 tsp. crushed garlic
Crushed black pepper
1. Cut 3 mm. thick egg-plant slices, cover pan with oiled baking paper, range the slices, brush with oil.
- 2. Bake for 30 minutes at medium heat, 180 Degrees Celsius, brush more oil in the middle. The slices should come out soft.
- 3. Make a layer of egg-plant, a layer of peppers, egg-plant again and peppers, sprinkle parsley, mix all ingredients and pour on top.
- 4. Marinade for 3 hours.
