Meat Buns Recipe
These famous meat buns have become a go-to recipe of mine – everyone who’s
tried them has asked for the recipe! Soft, fluffy buns filled with an incredible meat
filling – a real burst of flavor. I’m always looking for something easy yet filling for my
kids to enjoy after school, and these buns are perfect!
My son Roy always wanders into the kitchen the second the tray comes out of the
oven, asking how soon we can eat. I love serving these with various fresh salads on
the side – everyone dips their bun into their favorite salad, and each bite is like
eating a fluffy, savory cloud.
These soft, irresistible meat buns vanish quickly, making them the perfect family
meal, especially for kids!
Makes 9 buns
Ingredients:
Dough:
300 g flour (2 cups + 2 tablespoons)
½ tablespoon dry yeast
1 ½ teaspoons sugar
½ tablespoon salt
1 egg yolk (yellow)
60 ml oil (¼ cup)
140 ml lukewarm water (a little more than ½ cup)

1 medium onion, finely diced
200 g ground beef
200 g ground turkey (or additional ground beef)
⅓ bunch parsley, finely chopped

A pinch of sweet paprika
½ teaspoon turmeric
½ teaspoon chicken grill seasoning
1 heaping teaspoon bouillon powder
½ teaspoon black pepper
½ teaspoon salt

Preparation:
1. Prepare the filling:
Heat a skillet with 4 tablespoons of oil and sauté the diced onion until
golden. If you like spice, add sliced chili pepper rings at this stage and sauté
for about a minute with the onion.
● Line a deep bowl with two layers of paper towels and set aside. Add the
ground meat to the skillet and cook for about 5 minutes, breaking up clumps
as it cooks. Stir in the spices and cook for another 5 minutes. Remove from
the heat.
● Transfer the cooked meat to the lined bowl to absorb any excess oil. After a
few minutes, transfer the filling to fresh paper towels to ensure that it is
completely dry.
● Once the meat filling is free of excess moisture, mix in the chopped parsley
and set aside.
2. Prepare the dough:
● In a mixer, combine the flour, yeast, sugar, and salt. Add the egg yolk, oil, and
water. Knead until the dough is soft and smooth. Cover the dough and let it
rise for 2 hours, or until it doubles in size.
3. Shape the buns:
● Punch down the dough and divide it into 9 equal portions (about 60g each).
Roll each portion into a ball.
● Flatten each ball into a thin circle about 15 cm in diameter. Place 1½
tablespoons (or slightly more) of the meat filling in the center, then fold the
edges of the dough over the filling and seal it to form a ball.
4. Final rise and bake:
● Let the buns rise for 15–20 minutes while preheating your oven to 190°C
(375°F).
● Brush the tops with beaten egg yolk and sprinkle with sesame seeds. Bake
for about 20 minutes or until golden brown.
Serving Suggestions:
Serve the warm, fluffy buns with restaurant-style tahini , Turkish salad , roasted
vegetables , and matbucha for an unforgettable meal.
