


Minestrone soup
To me, minestrone soup means a lot of veggies in one big pot. I adore vegetable soups. In the winter, give me two big bowls of vegetable soup and that’s all I need. A classic homemade soup that’s full of goodness and with minimal effort. Use fresh vegetables and enjoy a wonderful and comforting soup on a winter’s day.
Makes 4 servings
Ingredients:
1 large onion
2 zucchinis
2 carrots
2 medium potatoes
1 medium sweet potato
100 grams tomato paste
1 tsp sugar
1 Tbsp Moroccan paprika
1.5 liters water
2 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)
2 cups of medium-sized / thin noodles
Preparation:
1. Finely dice all the vegetables. There’s no need to peel the zucchini, just give them a good wash. Heat a pot with 3-4 Tbsp of oil and sauté the vegetables for around 5 minutes while stirring.
2. Add the tomato paste, sugar, water, and spices and cook for 40 minutes or until all the vegetables are tender.
3. Add two cups of noodles + two cups of water and cook until the noodles are ready.
