Mini peppers stuffed with cheese

These beauties are super tasty! You won’t believe how yummy they are until you make them, but we warned, they’re addictive! Makes a great accompaniment to any meal. It’s hard to stop eating! I love eating foods that look AND taste great.

Ingredients:

10 mini red /yellow peppers
300 grams cream cheese
30 grams grated Parmesan / yellow cheese
30 grams grated Bulgarian/feta cheese
1 Tbsp chopped chives
Pinch of salt

Preparation:

1. I recommend using homemade cream cheese. The result is amazing and it’s so much cheaper than store-bought cream cheese, but you can use any type of cream cheese you have/like.

2. Heat an oven to 220°C. Arrange the peppers on a baking tray and bake for around 20-30 minutes. The peppers soften and blacken somewhat. I recommend turning them occasionally so they darken evenly on all sides.

3. Cut off the top of each pepper. Place the cheese and the other ingredients in a bowl and mix until well combined. Transfer to a piping bag and fill each pepper to the top.

4. Arrange the stuffed peppers on a serving plate and drizzle with olive oil. Serve with dried tomatoes and enjoy every bite!

Good to know…
These keep for a few days in the fridge. You can stuff the peppers with a small spoon. The cheeses are salty so go easy on the salt.
