Mix of Sweet Potatoes and Peppers Salad
If you already host a festive dinner go all the way. Do it from all your heart, Look what a wonderful salad I’ve got here.
Ingredients:
Fill up a medium-sized bowl of a mix
of leaves you like: Baby Greens, Rocket Leaves, Curly-Lettuce.
1 medium-sized sweet potato cut into cubes
1 packet of sliced Champignon Mushrooms
1 roasted yellow pepper
1 roasted red pepper
50-70 gr. Feta Cheese cut in cubes
1 handful of Pine nuts
Seasoning for the sweet potato:
1 tsp. crushed garlic
Ground black pepper
Salt
Seasoning for mushrooms:
3-4 spoons olive oil
1 spoon Silan
Ground black pepper
Salt
Salad Dressing:
4 spoons olive oil
4 spoons orange juice
1 tsp. crushed garlic
1 tsp. mustard
1 tsp. Silan/honey
Ground black pepper
Salt
Preparation:
1. Seasoned the sweet potato with olive oil salt and pepper bake cubes at 220°C for 15-20 minutes until they soften but not too much.
2. Sautéed the mushrooms in a hot pan with olive oil silan Season with salt and pepper.
3. Add mushrooms to the leaves, cut stripes of roasted peppers and put them on the leaves, sprinkle the Feta Cheese cubes, roast the Pine nuts and sprinkle on.
4. Mix the ingredients of the dressing, Drizzle the dressing over the salad before serving.
Note: you can make it without cheese.
