Easy Chocolate Muffins
These muffins are gorgeous. They don’t involve any hard work; you just mix everything together with a spoon and pop them into the oven to bake. Couldn’t be easier, right?! I’m all for making my life easy in the kitchen.
The kids and I loved making these. I try to be extra creative when I make birthday cakes. I want the end result to be perfect, and my kids to be excited with my creation.
A very important bonus is to let the kids decorate the cakes. Lay out all the toppings for them in small bowl and let them go crazy. That way, mom gets to rest a bit (bonus!) while the kids are occupied in the kitchen (double bonus!).
Makes 20 muffins
Ingredients:
Bowl 1:
3 eggs
120 ml oil (1/2 cup)
360 ml water (1.5 cups)
1/4 cup maple syrup
Bowl 2:
210 grams flour (1.5 cups)
1.5 tsp baking powder
200 grams sugar (1 cup)
1/2 cup chocolate drink mix powder (like Nesquik)
2 Tbsp good quality cocoa powder
Chocolate cream:
150 ml whipping cream (1/2 cup + 2 Tbsp)
150 grams bittersweet chocolate
Decorations:
M&Ms
Tiny meringues
Colorful sprinkles
Preparation:
1. Preheat an oven to 180°C.
2. Mix the contents of each bowl separately using a spoon and then mix the two bowls together. The batter is quite runny.
3. Fill each muffin cup 3/4 full.
*4. Place in the oven and bake for 20 minutes or until a toothpick inserted in the middle comes out clean.
To prepare the chocolate cream:
1. Melt the chocolate and the cream in the microwave. Mix until smooth. Cool for 5 minutes and coat the muffins.
