

Nectarine Cake
This amazing cake takes only 2 minutes to prepare and then into the oven it goes.
You’re going to love it! It’s so moist and flavorful, I can’t wait until it’s nectarine season so I can make this. Be prepared to fall in love with this cake.
It’s so easy to make, no need to peel the nectarines and everything gets thrown into one bowl for easy prep and clean up.
A wonderful cake for a summer weekend when nectarines are plentiful. BTW, the cake is non-dairy.
20 cm baking pan / English cake pan 30X12
Ingredients:
3 XL eggs
180 grams sugar (3/4 cup)
1 tsp vanilla extract / vanilla sugar
120 ml oil (1/2 cup)
5 nectarines
250 grams flour (2 cups minus 3 Tbsp)
2 tsp baking powder
Preparation:
1. Dice the nectarines. No need to peel them.
2. Preheat an oven to 180°C.
3. Cream the eggs and sugar for a few seconds, add the nectarines and the oil, and then finish off with the flour and baking powder. Mix until well combined.
4. Grease the baking pan and pour in the batter, evening it in a uniform layer. Bake for around 45 minutes or until a toothpick inserted in the middle comes out clean.
Good to know…
You can substitute three large unpeeled apples for the nectarines. You can also use nectarines that are past their prime, just cut away the bruised or mushy parts. Keep refrigerated. Freezer-friendly.
If you want to make things even easier, throw all the ingredients into the bowl of a mixer and use a paddle attachment to mix until well combined.
