One pot chicken and rice recipe

I love the combination of chicken and rice in one pot, not to mention that it’s always a bonus when there are fewer dishes to wash. It’s really one of the easiest dishes to make. The chicken and rice cook together and the result is truly delectable.
I love working in the kitchen but sometimes I have to take shortcuts, and with four kids, believe me it happens a lot. These kinds of recipes make my life a whole lot easier, and also a whole lot tastier.

Makes 4 servings

Ingredients:

1 kg drumsticks / wings / legs and thighs
1 onion
2 tsp minced garlic
2 carrots
1 Tbsp tomato paste
1 cup basmati / Jasmine / Persian rice
1 tsp sugar
1 tsp paprika
1/2 tsp rotisserie chicken spice
1/2 tsp turmeric
1 Tbsp chicken bouillon
1/4 tsp ground black pepper
Salt (if needed, to taste)

Preparation:

1. Heat a pot with 3-4 Tbsp of oil and sauté the chicken for around a minute or two on all sides. Finely dice the onion and carrots and sprinkle over the chicken. Add the tomato paste, sugar and spices and cover with around two cups of water, maybe a bit more.

2. Cook, covered, for around 40 minutes

3. Add the rice to the chicken. Give the pot a shake so everything settles in the sauce. Bring to a boil, cover and lower the heat and cook for 30 minutes. Turn of the heat and leave covered for another 15 minutes.

Good to know…
You can make this a day beforehand, instead of the carrots you can use 2 cups of mixed carrots and peas together with the rice. If you use Persian / Jasmine rice, cook for 20 minutes.

The instructions here are different from the instructions in Hebrew:
English: Cook rice for 30 minutes (Persian/Jasmin only 20)
Hebrew: Cook rice for 20 minutes (regardless)
