

Oven baked potato wedges
Make a double batch of these because they go fast! If there’s one thing my kids love and eat a lot of, it’s potatoes. Bake these on a high heat so they stay soft on the inside and crispy on the outside. Sometimes I have to remind myself that there are other dishes on the table aside from the potatoes..
Makes 5-6 servings
Ingredients:
1.5 kg potatoes
5-6 Tbsp olive oil
1/2 tsp paprika
1/3 tsp turmeric
Ground black pepper
1 heaped tsp salt
Preparation:
1. Preheat an oven to 200°C.
2. Fill a pot with water and bring to a boil.
3. Peel the potatoes and cut them into thick wedges. Add to the boiling water and cook for 7 minutes, then drain. The potatoes should be tender but still retain their shape well. Let cool.
*4. Add the other ingredients and gently toss together. Arrange in one layer on the baking tray and place in the oven and bake for around 35 minutes or until the potatoes are soft and golden.
