Passover chocolate cake
This recipe has been on the site for a few years already, and every Passover it features in thousands of homes.
It’s a great easy recipe, just mix in a bowl and bake in the oven. You honestly can’t go wrong here. A moist chocolate cake with chocolate cream. This is the kids’ favorite cake on Passover.
A 24 cm baking pan
Ingredients:
4 eggs
240 grams sugar (1 cup + 4 Tbsp)
180 ml oil (3/4 cup)
240 ml juice orange (1 cup)
1 cup chocolate drink mix powder (like Nesquik)
2 Tbsp cocoa powder
1/4 cup matzah flour
1 cup kosher for Passover self-raising flour
1 tsp baking powder
Chocolate cream:
120 ml cream (1/2 cup)
100 grams bittersweet chocolate
Preparation:
1. Preheat an oven to 180°C.
2. Whisk the eggs, sugar, oil, and add the orange juice. In a separate bowl, mix together the dry ingredients. Mix the contents of both bowls until well combined. Evenly transfer the batter to a greased cake pan. Bake in the oven for around 45 minutes.
3. Break up the chocolate into squares and place in a bowl. Add the cream and melt together in the microwave. Mix until well combined. When the cake comes out of the oven, pour the cream in an even layer over the cake.
A variation of the chocolate cream: Spread chocolate spread over the entire cake when it cools.
4. Here’s another way to make it: Transfer the contents of the wet ingredients bowl to a mixer and add the dry ingredients. Mix on low speed until well combined.
