Pasta with Creamy Sweet Potato Sauce Recipe
An amazing recipe. The combination of sweet potato and cheese is unbeatable and addictive. This is one of those recipes that you’ll make over and over again.
Makes a great lunch or supper in virtually no time. You won’t have to work hard, and the result is fantastic. This dish is a tried and tested favorite at my house.
300 grams spaghetti
1 medium sweet potatoor 2 carrots
250 ml cream
A pinch of nutmeg
50 grams grated cheese of choice
2 cloves of garlic
1 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)60 ml milk (1/4 cup)
1. Bring a pot of water to a boil, add the pasta and cook according to the instructions.
2. Peel the sweet potato and cut into small cubes. Add 3 Tbsp of oil to a pan and sauté the cubes of sweet potato until they are tender but not falling apart. Add the onion and sauté for a minute or two, slice the garlic and add to the pan for a quick sauté.
3. Add the cream and the milk. Season and cook for around two minutes, then add the cheese and mix until melted. Add the pasta and cook together for one minute, then remove from the heat. I recommend mixing everything together occasionally for a few more minutes.
