Peas and carrots in tomato sauce

This is a classic recipe for kids and a great addition to white rice. I love to make this and serve it with basmati rice. You’re going to love it!
It took me less than 10 minutes to make and I served it with schnitzel for a delicious lunch. Sometimes the best recipes are the easiest ones that make your kids happy. Who needs more than that?!

Ingredients:

4 cups of peas and carrots (you can use fresh, frozen, or canned)
1 medium onion
1 tsp minced garlic
2 Tbsp tomato paste
2 – 3 cups water
1 Tbsp Moroccan paprika
1 tsp sugar
1 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)

Preparation:

1. Chop the onion, put 2-3 Tbsp of oil in a pan and sauté the onion until golden.

2. Add the other ingredients except for the peas and carrots and cook for 2-3 minutes. Add the peas and carrots and cook for an additional 10-15 minutes.

3. Best served with white rice, it pairs beautifully with this recipe.

Good to know…
You can use frozen or canned vegetables, and even prepare it a day or two before.
