Pesto
I know that you can buy ready-made pesto but it’s so easy to make yourself and it’s really worth it for the freshness and flavor. It only takes 5 minutes and you’ve got a delicious pesto to enjoy.
This doesn’t make a huge batch so if you’re a big pesto consumer you might want to consider doubling the recipe. There are so many things you can with your pesto, including eating it with a spoon!
Preparation time:

Ingredients:
3 bunches basil
2 cloves of garlic
1/3 cup grated parmesan cheese (not mandatory)
3 Tbsp pine nuts
1/3 cup olive oil (give or take, depending on what consistency you like)
Ground black pepper
1/2 tsp salt
Preparation:
1. After chopping off the basil stems, I was left with 170 grams of basil.
2. Place the basil in a food processor. Heat a pan and lightly toast the pine nuts until they go lightly golden. Shake the pan occasionally to ensure they get toasted evenly and don’t burn. Add them to the food processor. Chop the garlic and add it as well, along with the cheese and salt.
3. Turn on the food processor and slowly drizzle in the olive oil until you reach your desired consistency.
Good to know…
The amount here is just under 3/4 cup. Freezer-friendly. You can mix with pasta, spread in grilled cheese sandwiches, add a couple of tablespoons to tomato sauce, or just spread on a slice of bread. You can add a few dots of pesto to pizza after spreading the tomato sauce over the base.
