Pot Roast with Potatoes
I’ve been making this recipe for so many years, I really love it. Whenever I make it I get so many compliments and people think I’ve slaved away at it when I really haven’t.
It takes me a few minutes to prepare and the stove does the rest.
If you love tender potatoes then this is the dish for you. The potatoes are delicious and coated in a wonderful sauce. Not to mention the meat, which is incredible.

Ingredients:
1 large onion
1 kg fresh stew meat, cut into medium sized chunks
1 Tbsp flour (not mandatory)
5 medium potatoes
Hot pepper
2 cups warm water
1 heaped Tbsp tomato paste
1 Tbsp Moroccan paprika
1/2 tsp turmeric
1 tsp sugar
1 Tbsp chicken bouillon
1/2 tsp ground black pepper
Salt (if needed, to taste)
Preparation:
1. Dice the onion. Put a pan on medium heat. Add 4 Tbsp of oil to a pan and add the onion. Sauté until golden. Add the Tbsp of flour and stir until the flour dissolves in the onion.
2. Lay the cubes of meat over the onions in one even layer..
3. Mix together water, tomato paste, sugar and spices and add to the meat. Cook covered for around two hours, checking occasionally that there is enough liquid in the pot.
4. Chop the hot pepper and dice the potatoes and add to the meat and stir. If necessary, add more water. Cook covered for around two hours, checking occasionally that there is enough liquid in the pot.
Good to know…
You can make this a day before, you can substitute carrots, mushrooms, peppers, for the potatoes.
