Pull apart yeast cake

This cake is beautiful and full of chocolate. It’s so much fun to take a bite of a warm and gooey chocolatey yeast cake that’s fresh out of the oven.
The dough is wonderful and there’s a generous amount of chocolate filling. You won’t even need a knife here, just pull off pieces of the cake. Remind you of something? Eat with your hands and savor every bite!
The idea is really simple. Make squares that you pile on to each other to create a beautiful cake.

3 English cake pans

Ingredients:

1 kg regular flour
200 grams very soft butter
2 egg yolks
22 grams dry yeast (2 Tbsp)
or 50 grams fresh yeast
480 ml lukewarm milk (2 cups)
1 heaped tsp salt
150 grams sugar (3/4 cup)

1 egg, beaten
1 tsp honey

For the syrup:
1 cup water
1/2 cup sugar

Preparation:

1. Place all the ingredients in the bowl of a mixer until you get a soft smooth dough. Let the mixer knead really well for a few minutes.

2. Place in a greased bowl and let rise for around 2 hours or until the dough doubles in size.

3. Dust your work surface with flour and divide the dough into 8 parts. Roll out each part to a 25×25 cm piece. The dough should be thin.

4. Spread chocolate over the entire piece of dough and divide it into 4×9 cm rectangles.

5. Place one rectangle on top of the other, like a tower, around 4-5 rectangles each time but you can put fewer pieces each time if it’s hard. Place in the cake pan really close together and fill it up to the end. There will be around 25 rectangles in each pan (give or take), depending on how thin the dough is.

Another option is to cut the dough into strips and place the strips on top of each other and then cut into rectangles.

6. Let rise for 20-30 minutes, brush with the egg and honey.

7. Preheat an oven to 180°C. Bake for around 25 minutes or until golden.

8. Cook the syrup ingredients and brush the cake with it when it comes out of the oven.

The bottom line:
Spread chocolate over the dough and cut into squares. Pile them on top of each other and fill up the cake pans.
