Pumpkin Pancakes with Honey

Do you have some of these days where you don’t feel like eating meat ? I go by my children: some prefer dairy meals and others like meatballs. This recipe is the ideal dish for both. It looks like meat-balls, the sauce is delicious and can be eaten with bread. Who needs more ?

 

Ingredients:

600 gr. pumpkin
2 carrots
2 eggs
3/4 cup breadcrumbs
1 medium-sized chopped onion
Diced black pepper
Salt

Sauce:

1 medium-sized chopped onion
1 full tsp. flour
2 spoons honey
2 cups water
1/2 tsp. cinnamon
1 small box tomato puree
Soup powder
Diced black pepper
Salt

Preparation:

1. Preheat the oven to 180°C

2. Grate pumpkin and carrots, fry onion until it becomes transparent, mix all ingredients.

3. Create balls, tighten well to let liquids out, cover pan with oily baking paper and arrange them inside.

4. Put into the oven and bake for 15 – 20 minutes or until the edges become golden, then turn and bake the other side for 10 – 15 minutes.

5. Fry the onion, add the flour and mix until the sauce is homogeneous, add all ingredients, bring to boil, lower fire and introduce the balls. Cook for 10 more minutes on low fire.
