Quick-Fix Cheesy Olive Rollups
The easiest recipes are often also the tastiest. Three simple ingredients, 5 minutes of your time, and voila, a delicious meal/snack is born!
These babies are adorable. I made them with very little oil and I was lucky to have gotten the few photos I did since my son and I kept grabbing another one, and another, and another, and before I knew it they were all gone! Made with staple ingredients that almost everyone always has on hand. I used whole wheat tortillas for added fiber and nutrition.
You’ll definitely make this recipe over and over again, it’s addictive. Just don’t forget to take out the toothpick before you dig in
Ingredients:
White / whole wheat tortillas, preferably large ones
Pitted green or Kalamata olives
Slices of cheese of choice
Toothpicks
Preparation:
1. Cut the tortilla into 8 slices (like a pizza) and the cheese into 4 slices. Place a slice of cheese on the wide end of each tortilla slice and top with an olive.
2. Roll the tortilla from the wide end toward the narrow point and spear with a toothpick to prevent the rollup from unrolling.
3. Heat a non-stick pan with oil spray and place the rollups in the pan. Cover and toast in the pan until the bottoms are golden, then flip and toast until the other side is golden as well.
4. Remove the toothpick before serving.
Good to know…
What to make these into pizza rollups? Spread some ketchup or pizza sauce on the tortilla. If you only have small tortillas, cut into 4 slices.
