Quick oven pancake
The best recipes are the ones where you throw everything into one bowl, mix, and that’s it. Two minutes to prepare and within 20 minutes I served this. Perfect. No need to whip or separate, and I didn’t even have to turn on the mixer. Really easy.
I like making this pancake as a treat for the kids. Sometimes I add maple syrup but most of the time the kids just devour it as soon as it comes out of the oven. It’s the best that way.
An 18 cm pan
Ingredients:
2 large eggs
100 grams sugar (1/2 cup)
100 grams 9% soft white cheese (2 very heaped Tbsp)
1 tsp vanilla extract
80 grams flour (1/2 cup + 1 Tbsp)
1/2 tsp baking powder
Preparation:
1. Preheat an oven to 180°C.
2. Beat together the eggs and sugar with a whisk or mixer for around a minute. Add the cheese and vanilla extract and continue beating. Add the flour and baking powder, and mix until well combined.
3. Place 2 Tbsp of oil in an 18 cm oven-safe pan. Pour in the batter and fry for a minute and a half. Transfer to the oven and bake for around 20 minutes until the pancake sets and the edges are golden.
4. Cut into 8 (more or less) slices (like a pizza). Serve with maple syrup, chocolate spread, or other favorite pancake toppings. Best served immediately.
Good to know…
There’s only 2 Tbsp of oil. That’s it. You have to fry before baking in the oven. I haven’t tried making a non-dairy version. I made the recipe three times in a row which is why there are three pancakes in the photos. The recipe makes only one pancake.
