Red Lentil Fritters

These are healthy fritters that are easy to prepare and can be either fried or baked.
I went one step further this time and added red lentils, which are my favorite, and the combination of the vegetables with the lentils is perfect! Be prepared to fall in love, these are truly delectable.
I checked the fridge and took inventory of all the veggies I had and it turned out that I had enough to make fritters. I caught sight of the lentils in the pantry and knew that I had a perfect recipe for supper. From the moment I cooked the lentils, it took me 10 minutes for the fritters to make it to the table.
An easy recipe with ingredients that almost everyone always has on hand.

Makes 16 fritters

Ingredients:

1/2 cup red lentils (which yields almost 1.5 cups lentils after cooking)
2 carrots
1 potato
1 onion
2 cloves of garlic
70 grams flour (1/2 cup)
1 egg
1/4 bunch parsley
Ground black pepper
1 tsp salt

Preparation:

1. Fill a small pot with water and bring to a boil. Cook the lentils for 15 minutes and drain.

2. Finely chop the onion and the garlic. Sauté the onion for around two minutes, add the garlic and continue sautéing for another minute. Grate the vegetables on the large holes of a box grater and add to the lentils along with the onion and garlic. Chop the parsley and add to the vegetables, along with the egg, salt and pepper.

3. Form ping pong-sized balls and flatten them, then fry and until golden on both sides.

4. To bake: Preheat an oven to 180°C. Line a baking tray with greased parchment paper and arrange the fritters on the paper. Bake one side for around 25-30 minutes, flip and then bake the other side for around 10-15 minutes.

Best served with a sour cream or tahini dip, it’s a great combo

Good to know…
You can make these a day before and heat them in the oven before serving. Also great served at room temperature, wonderful for picnics.
Double the recipe. Trust me, they’re amazing. The batter cannot be made ahead of time. Work quickly because a lot of water will drain out of the vegetables.
