Rice with Dry Fruit

This is a dish specifically prepared for tu bishvat. White rice decorated by the dry fruit in abundance.  Look at the picture it’s beautiful.

2 cups Jasmin Rice
1 small chopped onion
4 spoons oil
3 cups water
1 1/2 cups chopped dry fruit
2 spoons Pistachios
2 spoons sliced almonds
1 bit of Cinnamon
1 spoon Brown Sugar
Diced black pepper
2 flat tsp. salt

1. Put oil in a hot pan, add the rice and stir-fry it until it is all covered in oil; put in the water and bring to boil, add spices and season, then lower the fire to low fire and cover and steam for 18 minutes, leave covered for 10 minutes, open and mix.

2. Fry the onion until it becomes yellow; add brown sugar and mix until it gets absorbed, bring the dry fruit and the Cinnamon and fry until every fruit is soft.

3. In another clean hot pan, roast Pistachios and almonds until they become golden, mix them and don’t burn them.

4. Serve the rice with dry fruit on top and then Pistachios and almonds.

To get the aesthetic effect, put the rice in a pan and tighten it and overturn it.
If you do not have brown sugar, use Silan.
