


Roasted Baby Potatoes
I love potatoes In my opinion this is one of the easiest side dishes out there, and you don’t even have to peel the potatoes.
It only takes a few moments to prepare, and the oven does the rest of the work. These come out golden, tender, and delicious. This is a perfect side dish for busy cooks, and for anyone who likes to eat tasty food.
Ingredients:
1 bag of small potatoes (approximately 20 potatoes)
4-5 Tbsp olive oil
1/2 tsp sweet paprika
1 tsp salt or 1 Tbsp chicken bouillon
1 Tbsp chopped parsley
Preparation:
1. Preheat an oven to 200°C.
2. Scrub the potatoes. Fill a pot with water and bring to a boil. Put the potatoes in the boiling water and cook for 5 minutes, then drain.
3. Cut the potatoes in half, place in a bowl together with the oil and seasoning and mix well. Transfer to a baking tray in an even layer.
4. Place in the oven and bake for around 40 minutes or until the potatoes are tender and golden.
*3. Before serving, sprinkle the chopped parsley over the potatoes.
Good to know…
You can substitute with 4 regular potatoes (peeled or unpeeled) cut into wedges. You can prepare a day in advance or parboil the potatoes in advance and do the rest the next day. Not freezer friendly.
