Savory cheese muffins recipe
It’s always best to start the day with something that puts a smile on your face and maybe even draws you into the kitchen. I had some cottage cheese that was about to expire. I added some sweetcorn and olives and after 5 minutes of easy prepping I popped these into the oven. Twenty minutes later I had golden muffins that were as fragrant as they were tasty.
Makes 18 muffins
3/4 cup sliced olives
2 large eggs
4 Tbsp oil
200 grams cottage cheese
3 Tbsp corn
50 grams grated cheese of choice
140 grams self-raising flour (1 cup)
Ground black pepper
1 tsp salt

You can make these a couple of days in advance and keep them in the fridge. You can replace the corn with the same amount of olives or other topping of choice. Freezer-friendly.
