


Semolina Orange Cake with Coconut
This cake is amazing, and I’m not the only one saying this. I got the recipe from a friend of mine: “You have to make this cake, it’s SO good.”
After she said such stuff, do you really think that I won’t make it?
A truly wonderful cake, it’s non-dairy. It took me 5 minutes to make and put it in the oven.
For semolina and oranges lovers, a fantastic, easy-to-make cake at home.

Ingredients:
4 M eggs
200 g sugar (cup)
240 ml oil (cup)
240 ml fresh orange juice (cup)
140 g self-raising flour (cup)
200 g semolina (cup)
90 g coconut (cup)
Syrup:
240 ml water (cup)
200 g sugar (cup)
Juice of one lemon
Preparation:
1. Preheat oven to 180 degrees, grease a baking sheet or line a baking sheet with baking paper.
2. Put the eggs and sugar in the mixer bowl, using the balloon whisk, beat the eggs and sugar for about a minute, add the wet ingredients, then mix the dry ingredients on low speed until a uniform and thick mixture.
3. Transfer to the pan and bake for about 45 minutes.
4. Meanwhile, while the cake is in the oven, boil the sugar water and lemon juice for about 8 minutes (until the sugar is completely dissolved) and remove from heat.
5. When the cake comes out of the oven, use a spoon to evenly moisten the entire cake, cool and cut into cubes.
