Smashed potatoes

This is definitely one of the best potato recipes out there. It’s hard to really call it a recipe since it’s so simple and easy.
This is more of a way to bake the potatoes that gives an amazing result. I like to make a lot so I can snack on them and still have enough to serve at the table.
These are just potatoes with oil and salt, no other seasoning. The simplicity highlights the flavor of the potatoes, which make a great accompaniment to any meal.

Ingredients:

You know those small potatoes that come in the relatively large bags?
That’s what I’m talking about here. You can use as many as you want, it’s up to you.
Make at least 20, to fill up the entire baking pan.
Salt
Oil

Preparation:

1. Preheat an oven to 200°C.

2. In the meantime, peel the potatoes, place on a baking tray lined with parchment paper, drizzle them with oil and salt, and bake for around 20 minutes or longer. The potatoes are supposed to be soft and lightly golden.

4. Take a potato masher and smash each potato lightly. Leave some thickness, don’t flatten them completely. Brush the potatoes with oil and bake for 30-40 minutes until they are golden.

Good to know…
Don’t make in advance, these need to be made just before serving. Best made using small-medium potatoes.
