


Spinach nuggets
There are many such dishes on Hanukkah, but I prepare them round the year. Great supper and relatively healthy…It is hard to believe how one gets used to making baked food after so many years of frying. It saves time and I’m a mother after all.
As for the nuggets, they are extremely tasty: a combination of spinach, sweet potato and good cheeses.I made them small, the size of a bite and they were devoured within very short time
15 nuggets
Ingredients:
400 gr. spinach
1 crushed sweet potato
50 gr. grated Feta Cheese
3 spoons oil
1/3 cup breadcrumbs
1/2 cup grated cheeses (Gouda, yellow cheese, Kashkaval)
1 egg
1/2 tsp. salt (careful because the Feta is salty!)
Diced black pepper
Breadcrumbs for the coating
Preparation:
1. Preheat the oven to 180°C
2. Blanch the spinach in boiling water for 10 minutes, filter and squeeze, then chop up and mix with theingredients.
3. Make the nuggets, by hand or by shape and coat with breadcrumbs.
4. Cover pan in baking paper and bake the nuggets for 20 minutes on one side and 10 on the other or fry on both sides until they get yellow.
Note: I haven’t coated perfectly because I wanted the beautiful colors to be seen.
Wash the spinach thoroughly because it retains a lot of sand inside!
