


Stove top chicken with sweet potatoes
This is a super popular recipe in my home and is always a welcome addition to our weekday or weekend meals. The sauce is fantastic, the sweet potatoes are soft, and the onion takes it to the next level!
My son loves to serve it on rice or wheat and licks his plate clean.
A simple recipe but straight from the heart with a taste of home
Ingredients:
4 chicken drumsticks + 4 chicken thighs
1 onion
2 sweet potatoes
1/3 cup raisins
2 Tbsp honey
1/4 bunch parsley
1 Tbsp Moroccan paprika
1 tsp tomato paste
1 tsp rotisserie chicken spice
1/2 tsp turmeric
1 Tbsp chicken bouillon
1/3 tsp ground black pepper
Salt (if needed, to taste)
Preparation:
1. Dice the onion. Heat 2 Tbsp of oil in a pot and add the onion. Sauté until golden. Drizzle the honey over top and arrange the chicken over the bottom of the pot. Add the spices, tomato paste, and 1.5 cups of water.
2. Bring to a boil, lower the heat, cover and cook for around 30 minutes. Dice the sweet potatoes and add to the chicken. Give the pot a shake to ensure that everything sinks in the sauce. Chop the parsley and add to the pot along with the raisins.
3. Cook, covered, for 45 minutes. Peek inside occasionally to see if there is enough liquid in the pot. If not, add a little bit more water.
4. Mix everything together and season with salt and pepper.
Best served with couscous / basmati rice / mashed potatoes
Good to know…
Freezer-friendly. You can substitute carrots or potatoes for the sweet potatoes. You can also leave out the raisins and the parsley if you prefer. You can make this a day before.
