Super Crispy Chicken Schnitzel
If a perfect schnitzel exists, this is it! Everyone knows how to make schnitzel the regular way by dipping in egg and breadcrumbs. Not this time!
Here’s a schnitzel recipe that’s out of this world. Each bite is a crispy delicious delight.
I know it’s just schnitzel but when I come up with such an incredible recipe, I can’t help but get excited and obviously share it with you.
Every mother has her arsenal of recipes that make her kids happy. Those little tricks of how to make a crispy schnitzel are so important. My son calls it “the schnitzel that crunches in your mouth”. Makes 4-5 servings
800 grams chicken breast tenders / 9 medium thin chicken breast fillets
140 grams flour (1 cup)
180 ml water (3/4 cup)
70 grams cornstarch (1/2 cup)
1 tsp mustard
1/2 tsp sweet paprika
1 Tbsp sweet chili sauce
1 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)
1. Mix the flour, water, and other ingredients until everything is well combined.
2. Dip the schnitzel in the batter, shake off any excess, and coat in breadcrumbs.
3. Heat 4-5 Tbsp of oil in a pan and fry the schnitzel until golden. Flip and fry the other side until golden as well. Remove to drain on a plate lined with absorbent paper towel.
Served with basmati rice, tomato and rice soup and vegetable salad

I love using chicken tenders because, like their name implies, are tender and perfect for kids. For large pieces I cut them in half. It’s super crispy when made fresh. Afterwards, they’re tasty but not really crispy anymore.
To bake, place on a greased baking tray in a 180°C oven for around 20 minutes. Note that it doesn’t go golden even though the chicken bakes. Don’t be tempted to
