Sweet-Potato Latkes recipe
An amazingly tasty and simple fritter recipe. The sweetness of the sweet potato paired with the cool and creamy sour cream dip is a marriage made in heaven.
Makes 20 fritters
3 small-medium sweet potatoes
3 Tbsp oil
50 grams flour (5 Tbsp)
1 large egg
1 tsp salt
1. Grate the sweet potato and onion on the large holes of a box grater and place in a bowl. Add the other ingredients and mix. Form balls with the mixture and flatten them.
2. Heat 3 Tbsp of oil in a pan and fry the fritters until they are crisp and golden on both sides. Remove from the pan and let drain on a plate lined with paper towels.
Good to know…
Don’t skip the sour cream dip! It’s amazing with the fritters and also on its own. Want to take this soup to the next level? Sauté the onion.
You can make these a day before and heat them in the oven before serving. Also great served at room temperature.
