


Sweet potato patties stuffed with cheese
This is a traditional Sweet Potato Fritters, and is a wonderful recipe, Quick and healthy fritters
Ingredients:
2 sweet potatoes that weigh 800 gr. altogether
5 tablespoon of oil
1 cup flour
Breadcrumbs
Diced black pepper
Salt
Filling options:
Small fried entire mushrooms
Steamed small Cauliflower flowers
Feta Cheese
Dip:
200 ml Sour Cream
2 tsp. mayonnaise
2 tsp. crushed garlic
Chopped Chives
Diced black pepper
Salt
Preparation:
1. Cook the sweet potatoes in boiling water until they are tender and squash them into puree; add flour and spices.
2. Wet your hands and shape balls the size of Ping-Pong Balls; insert a cauliflower flower, a mushroom or Feta Cheese cube and then coat with breadcrumbs.
3. Preheat the oven to 180°C
4. Cover the pan with oily baking paper, arrange the Fritters inside and bake for about 20 minutes each side or until they become golden.
Another possibility: fry in deep oil until it becomes golden from all sides.
Serve with sour cream dip!
Tips:
When fried, the dumpling looks more like a ball.
When do we know to turn over the dumpling in the oven: when it doesn’t stick to the bottom of the pan. If it sticks, leave it for two more minutes and check again.
Always shape the balls with wet hands because the mixture is sticky.
Don’t roll or dip the fritters in breadcrumbs because they are very soft, sprinkle them on top, change from hand to hand and sprinkle on the other side.
