The Ultimate Sweet Potato Soup
I love both the taste and texture of this soup. It’s a real belly warmer and pure comfort food.

Makes 4 servings
Ingredients:
1 large onion
3 medium sweet potatoes
1 medium potato
1 Tbsp tomato paste
1 tsp paprika
250 ml half and half cream
1.5 liters water
1 tsp sugar
2 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)
Preparation:
1. Dice all the vegetables. Heat a pot with 4 Tbsp of oil and sauté the vegetables for around 5 minutes while stirring. Add the tomato paste, sugar, spices, and water.
2. Cover and cook for 30 minutes. Check that the vegetables are soft and then blend the soup in a blender or using a immersion blender. Add the cream, cook for one more minute, taste and adjust seasoning.
3. If the soup is too thick, add a little bit more water.
Good to know…
You can make this without the tomato paste and the sugar. You can also leave out the cream to make it non-dairy.
