Tomato And Pearl Barley Soup
Tomato soup is one of my favorite soups. I grew up on this soup at my grandmother’s house.
This soup is comforting and indulgent. I added barley, which is nice and filling and works really well with the flavor of the tomatoes.
Ingredients:
1 medium onion
1 kg ripe red tomatoes
1/2 cup pearl barley
3 cloves of garlic
1 sweet potato
1 large carrot
1 Tbsp tomato paste
1 tsp sugar
2 L water
1 Tbsp sweet chili sauce
1 Tbsp sweet paprika
2 Tbsp chicken bouillon
Freshly ground black pepper
Salt
Preparation:
1. Bring a pot of water to a boil. Score the tops of the tomatoes and drop them in the boiling water. Cook for 5 minutes, drain, peel, and chop.
2. Heat 3 Tbsp of oil in a pot. Chop the onion and sauté until golden. Chop the garlic and add to the pot. Add the water, tomato paste, chili, sugar, and spices.
