Tomato Rice Soup

This was my favorite soup when I was a girl. I could eat it non-stop. My grandmother used to serve me a bowl of soup every day when I’d come home from school. Don’t you agree that there’s nothing like a bowl of hot soup on a cold and rainy day to warm your belly and put a smile on your face?! Now I’m going to get myself a second helping…

Makes 5 servings

Ingredients:

6-7 nice red tomatoes
1 large onion
2 tsp minced garlic
1/2 cup rice
2 Tbsp tomato paste
1/2 cup chopped parsley
Just under 2 liters water
1 tsp sugar
1 Tbsp sweet paprika
2 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)

1 egg yolk

Preparation:

1. Score each tomato with an X, place in boiling water for 5 minutes, strain and cool, then remove the peel.

2. Chop the onion and place in a pot with two Tbsp of oil. Sauté for a few minutes, then add the garlic and sauté for a bit longer. Chop the tomatoes and add to the pot. Stir for around a minute and then add the water, tomato paste, sugar, and spices.

3. Cook on medium heat for around 30 minutes, then add the rice and partially cover, continuing to cook for another 20 minutes.

*4. Whisk the yolk and add it slowly to soup while stirring. Cook for another minute and then remove from heat.

Good to know…
The yolk is optional. This is a great soup for tomato lovers!
