Tuna shakshuka
Sometimes you fancy a meatless light meal; I thought of a Shakshouka right away, but not any Shakshouka, but one with Tuna. We devoured it and rubbed the bottom with bread not to miss any of the tastes.
Ingredients:
1 onion cut into cubes
7 red tomatoes
1 small Tuna can 160 gr.
4-5 eggs
1 small can of tomato puree
Sugar according to taste
Soup powder
Diced black pepper
Salt
Preparation:
1. Boil water for 5 minutes. Make an X on in the bottom of the tomatoes and put into boiling water.
2. Fry the onion until it yellows, chop the tomatoes and fry for a few more minutes, mix, add 2 cups of water, the Tuna and spices and cook for 20 minutes until the liquids get absorbed.
3. Make small holes in the mixture and add the eggs; cover and let simmer until the yolks are ready according to taste (liquid are the best).
4. Serve with good bread.
