Vegetable soup with meatballs recipe
This is a wonderful recipe that gives you a delicious vegetable soup, which is great on its own, PLUS meatballs as a main course. Aside from the great flavor, it’s also a one-pot meal, which saves on dishes. I’m really not lazy but I’m all for shortcuts that make my life easier.
Makes 18 meatballs
Ingredients:
250 grams ground chicken
250 grams ground beef
1 medium potato
1 onion
2 Tbsp oil
1 tsp turmeric
1 Tbsp chicken bouillon
Ground black pepper
Salt
Vegetable soup:
1 large zucchini
2 carrots
1 potato
1 tsp flour
2 L water
1 Tbsp paprika
1/2 tsp turmeric
2 Tbsp chicken bouillon
Ground black pepper
Salt (if necessary, to taste)
Preparation:
1. Mix all the meatball ingredients together and form into balls. Refrigerate for around an hour.
2. Grate the vegetables and place in a pot along with all the other ingredients and bring to a boil. Lower the heat and cook for around 20 minutes, then add the meatballs and cook for an additional 25 minutes on low heat.
Served with mung beans and vegetables, cooked chickpea salad, bulgur and dried tomatoes.
