Wings and potatoes in the microwave
This recipe is for those super busy days when I don’t have time for any fancy cooking. Enter the microwave. I usually don’t cook in the microwave but when I’m stressed for time, it can be my best friend.
Wings and potatoes that are ready in 13 minutes, give or take, depending on the microwave. It’ll only take a few minutes to prep and you won’t believe that you can get an entire meal on the table in such a short time. Tasty wings and tender potatoes in a yummy sauce. Lunch is served!
Ingredients:
1 kg chicken wings, halved
1 onion
4 potatoes
1 tsp flour
2 cloves of garlic
1 Tbsp sweet paprika
1/2 tsp spicy paprika
1/3 tsp turmeric
1 cup water + 1/2 cup boiling water
1 Tbsp chicken bouillon
Ground black pepper
Salt (if needed, to taste)
Preparation:
1. Dice the onion. Heat 2 Tbsp of oil in a pan and add the onion. Sauté until it starts to get golden. Chop the garlic and add to the onion to sauté for a few minutes until fragrant. Transfer to a microwave safe dish.
2. Add the wings to the dish. Mix the flour and water until well combined. Add the spices until well combined and then add to the wings.
3. Dice the potatoes. Heat a pot with water and bring to a boil. Cook the potatoes for 5-6 minutes and drain. Add the potatoes to the wings and mix together. The water should reach 3/4 of the height of the wings.
4. Cover with plastic wrap and cook on high in the microwave for around 13 minutes.
Good to know…
Cooking time depends on your microwave. Check to see whether the wings are cooked enough and if necessary, put back in the microwave for a few more minutes.
