


Zucchini Shakshuka
You know the feeling when you don’t fancy cooking because it is too hot outside or you’re simply too busy? That is the right time for a Shakshuka. it only takes a couple of minutes, it comes with a salad and bread and ‘Bon Appetit’ You’ve got yourself a lunch. By the way, this is not the standard Shakshuka because I felt like having a change.
Ingredients:
4 well rinsed Zucchini
1 medium-sized onion
4 tomatoes / cherry Tomatoes
1 tsp. sugar
1 spoon Paprika
4-5 eggs
Diced black pepper
Salt
Preparation:
1. Chop the onion and fry it until it becomes yellow, cut the Zucchini into cubes and fry until it is soft, cut the tomatoes and add to the frying until they become soft, add sugar, water and spices and go on cooking until everything is soft.
2. Break the eggs gently not to ruin the yolks and cook until you get the right consistency of the yolks. Take a piece of bread, sit back and enjoy it.
