Hidden Veggie Spaghetti & Meatballs

It’s the ultimate family comfort food — tender meatballs simmered in a rich tomato sauce and served over pasta, that quietly packs the sauce with extra vegetables. The veggies are prepared so finely that they almost completely disappear — your kids wouldn’t even notice them 🙂 It’s an easy, satisfying meal that anyone can enjoy.
3 Servings
Ingredients:
Half a kilo of ground beef (ribs)
Medium sweet potato
2 medium onions, finely chopped
Half a cup of breadcrumbs/flour
Egg
Spices:
Pinch of cinnamon
Half a tablespoon of soup powder
Half a teaspoon of salt
Half a teaspoon of black pepper
Sauce:
Medium onion, diced into small cubes
3 cloves of garlic, thinly sliced
Large, ripe, soft tomato, finely chopped
A hot pepper, thinly sliced
2 – 3 cups of water
2 tablespoons of tomato paste
A teaspoon of sugar
Spices:
A teaspoon of sweet paprika
Three-quarters of a tablespoon of soup powder
A touch of cumin
Half a teaspoon of salt
Half a teaspoon of black pepper
Preparation:
1.) Boil a pot of water. Cook the sweet potato until it’s soft. Drain and mash until a smooth puree.
- 2.) Making the meatballs: Preheat a pan with 2 – 3 tablespoons of oil. Fry both onions and the garlic
(one onion reserving for the sauce) until they turn golden. Turn off the heat. Transfer 3/4 of the amount to a bowl, leaving the rest in the pan. - 3.) Add the sweet potato and the remaining meatball ingredients to the bowl. Form small balls and chill them for 30 minutes.
- 4.) For the sauce: Add the diced tomato, chili pepper, tomato paste, water and spices to the pan containing the remaining onion. Cook for about 15 minutes on medium heat.
- 5.) Add the chilled meatballs to the hot sauce and cook for about 20- 25 minutes. Gently shake the pan sometimes.
- 6.) Make the pasta according to its package instructions and serve it with the meatballs and the sauce.
