One-Dish Wonder: Bulgur with Vegetables

The best way to eat bulgur is with vegetables — it’s a great side dish. Forgive me rice lovers, but it’s time to move on to the healthier side dish that is also much easier to make than rice.
It has a lot of nutritious advantages, and bottom line — it’s so easy to make, which makes it perfect for lunch. Want to really know how easy it is to make? it takes 15 minutes to cook. That’s it. It also blends well with other recipes.
Here’s a wonderful recipe that is perfect not just for vegetarians or vegans, but also for everyone.

Ingredients:

1 cup thick / coarse bulgur
2 large red peppers, chopped small
2 large carrots, chopped small
3 cloves garlic, chopped
1 teaspoon cilantro
1 medium onion, chopped small
2 cups water
1/2 teaspoon black pepper
1 teaspoon salt, a little more
1 tablespoon of date honey

Preparation:

1.) Preheat a pot on medium heat with 4 tablespoons of oil and start frying the carrot cubes for 2
minutes. Add the pepper cubes, fry for 2 more minutes and finish with the onion and garlic until they turn golden.

2.) After the vegetables soften, add the bulgur, water, salt, pepper and date honey. Boil, cover,
reduce the heat and fry for 15 minutes. Turn off the heat and keep it covered for another 15 minutes.

3.) Before serving, sprinkle some chopped parsley.
