Strawberry Yogurt Muffins Recipe
Here’s a really simple recipe for wonderful strawberry yogurt muffins. You don’t even need to use a mixer — all you need is a spoon, a bowl, and a muffin pan.
Just look at the pictures — the muffins look wonderful. It’s basically amazing strawberry yogurt muffins that can be made in less than 30 minutes.
Every time winter comes, I always wonder what I should make with the strawberries — maybe a dessert? a mousse cake? maybe even strawberry jam?
Before I make these things, I always make muffins.
Wonderful muffins with yogurt that gives them a soft texture, along with gentle touches of strawberries that add a hint of tartness.
One of the best things I’ve ever eaten.
15 Muffins
Ingredients:
80 g strawberries, cut into small cubes (1/3 cup)
1 teaspoon sugar
2 eggs
150 g sugar (3/4 cup)
2 teaspoons vanilla extract
80 ml oil (1/3 cup)
80 ml milk (1/3 cup)
200 ml yogurt (1 cup)
210 g flour (1/2 cup)
1/2 teaspoon baking powder
Preparation:
1. Sprinkle a teaspoon of sugar on the strawberry cubes and wait 15 minutes.
2. Preheat oven to 180 and grease a mold.
3. Beat eggs and sugar for about a minute. Add vanilla extract, oil, milk and yogurt. Mix until smooth. Add the flour and finish with the baking powder.
4. Add the strawberry cubes with minimal mixing. Fill the molds 3/4 full. Bake for about 20 – 25 minutes.
