Abulafia Pita for Children
I’m always looking for dinner ideas for Aviv. I check what I have in the fridge: cheese, some pitas I have in the freezer, and then I remembered that pastry I once ate at the Abulafia bakery — it was so
delicious, warm, golden, and super soft.
You don’t need to buy this pastry — you can easily make it at home, customize it however you like, and it only takes 10 – 15 minutes to make.
The yolk ozzes out and the cheese stretches. Aviv takes a bite and doesn’t stop smiling — a perfect recipe for dinner.
Ingredients:
3 eggs
3 pita breads
3 slices of yellow cheese
Half a cup of pitted olives/corn
Ketchup
Salt
Preparation:
1.) Preheat the oven to 180°C/356°F.
2.) Cut a circle in the middle of the pita and leave the sides wide — it’s supposed to look like a plate.
3.) Spread ketchup, place cheese on top, gently lift the sides up and put the leftover ketchup and cheese below them. Add olives/corn and break an egg on top. If the yolk accidently breaks it’s still fine.
4.) Bake for 11 minutes, cut in half and watch as the yolk oozes out. Cut into triangles and just watch how the cheese stretch.
