Quick Cottage Cheese Buns

The best recipes are made of leftovers I have at home and believe me, they are the best.
I had cottage cheese that no one wanted to eat and there is no way that I would throw it away, it’s a great raw material to make all kinds of tasty dishes from. I have already started imagining what I am going to make with it; I wanted to serve pastries with a salad to surprise the kids with something
delicious.
No proofing needed, you just make the dough, make the rolls and you put them in the oven. Now you can focus on everything else; Make a vegetable salad, some hard-boiled eggs and herring.
When the rolls are in the oven, the smell starts to waft through the house, and I can already hear Aviv scampering on his way to the kithcen.
“Mom, what smells so good?” This is the best way to wake up in the morning. I serve it hot to the table. The kids eat with pleasure and I’m satisfied that I didn’t throw the cottage cheese away. Shh, it stays between us, no one needs to know:)

36 Small rolls

Ingredients:

250 g cottage cheese (cup)
200 ml gil (cup) / yogurt
100 g grated yellow cheese
200 g butter cut into small cubes
400 g flour (3 cups less 2 tablespoons)
5 g dry yeast (teaspoon)
1 teaspoon salt

Whipped egg
Sesame seeds

Preparation:

1. Put the butter, salt, cottage cheese, gil, yellow cheese, flour and yeast in a mixer. Use a dough hook to process the ingredients into a sticky dough. Prepare a very floured baking sheet in advance. Divide the dough into 4 parts and flour each half. Roll out on a floured surface into a rectangle measuring 26X30 cm.

2. Cut into long triangles. Roll from the wide part to the narrow part and transfer to a baking sheet.

3. Preheat the oven to 180 degrees for about 10 minutes in advance. Brush the rolls with beaten egg, sprinkle with sesame seeds and bake for about 20 minutes.

*Want more larger rolls? Divide into 3 balls.
