Sweet and Sour Pepper Salad
A wonderful salad for the holiday table or for Friday dinner, especially suitable for pepper lovers. I like to make a quantity and keep it in the fridge. The salad only gets better and the flavors even better. A great addition to any meal.
3 – 4 servings
Ingredients:
3 red peppers, quartered and thinly sliced
3 yellow peppers, quartered and thinly sliced
1 tablespoon ketchup
2 tablespoons vinegar
Ground black pepper
1/2 teaspoon salt
Preparation:
1. Heat a large frying pan with 4-5 tablespoons of oil and fry the peppers for a few minutes until they soften, stirring occasionally.
2. Add the remaining ingredients and fry for another 5 minutes over medium heat and remove from heat.
