Got Leftover Chicken From Friday? This Is What You Should Do With It
Got any leftover chicken from Friday? everyone does, and I always think about what I should do with it.
I don’t waste food, I always make something different with it.
A good option is to make a cold chicken salad or a vegetable stir fry — this way, I don’t waste food and also make a wonderful lunch for the kids. I also add some fried potatoes along with other vegetables.
I saute everything together and serve with warm pitas, tahini and my mom’s matbucha — it’s super delicious!

Ingredients:
400 g prepared chicken meat, cut into small pieces (chicken, cutlets, chicken breast, beef)
Medium onion, diced
4 medium potatoes, diced
200 g small pumpkin, diced / 2 carrots, diced
1 tablespoon sweet chili sauce
Ground black pepper
Salt
Preparation:
1.) Preheat a pan on medium heat with enough oil that will cover the bottom. Fry the potato cubes until they start to turn golden, add the carrot cubes, fry for 2 – 3 minutes and lightly fry the onion cubes.
2.) Add the chicken pieces to the pan, saute for about 2 minutes, add the sweet chili sauce, salt and pepper.
*You can also add rice or Israeli couscous.
