Cinnamon Rolls

One of the best ways to start the morning is with chocolate babka. A soft dough with a wonderful filling.
This time, I’m not talking about chocolate, I’m talking about cinnamon — a great cinnamon filling that you’ll never stop eating.
Amazing and delicious cinnamon rolls. Some people call them cinnaroll or cinnabon — but the name doesn’t matter, it’s about how tasty it is.
If you love cinnamon, then this recipe is perfect for you.

Ingredients:

440 g flour (3 cups + 2 extra tablespoons)
11 g dry yeast (tablespoon) / 25 g fresh yeast
40 g sugar (2 tablespoons)
Half a teaspoon of salt
Yolk (yellow)
100 g very soft butter
240 ml warm milk (cup)

Sugar syrup:
120 ml water (half a cup)
100 g sugar (half a cup)

Cinnamon filling:
150 g very soft butter
100 g brown sugar (half a cup)
50 g white sugar (less than a quarter)
3 flat tablespoons cinnamon

Whipped egg for brushing

Preparation:

1.) Place flour, yeasts and sugar in the mixer bowl and gently mix. Add salt along with the rest of the
ingredients, and using the dough hook process the ingredients until you get a smooth, soft, and a little sticky dough.

2.) Options:
Grease a bowl, place the dough there and grease the top of the dough a little. Cover it and put it in the fridge for about 8 – 10 hours. Another option is to shape the dough into a ball, cover it, and let it rise for about 2 hours until it doubles in volume.

3.) Reduce the volume and cut the dough into three parts. (two parts is also fine) Flatten each part until it becomes the size of 25×25.

4.) Making the filling:
Mix butter/dairy-free butter with both sugars and cinnamon to achieve a homegenous mixture. Then, spread a thin layer of the filling on each part and roll it up.

5.) If you have time, it is recommended to freeze for about 30 minutes. Cut into thick rolls, place in a pan and let it rise for about 15 minutes.

6.) Making the syrup:
Boil water and sugar for a couple minutes.

7.) Another way to make the filling:
Brush over the dough with butter, mix both sugars with cinnamon and sprinkle on top of the butter.

8.) Brush over the rolls with a whisked egg and then bake for about 25 minutes until they become golden. Then, brush over the rolls with the syrup.
