Apple Chocolate Chip Muffins
Just mix it all in one bowl and pop it in the oven. No mess, no fuss! I was craving apple cake and thought that muffins would be a great idea. I even added chocolate chips for extra flavor.
The result was amazing muffins that smelled incredible, and just think — in the time it took you to read the recipe you could have already had these beauties in the oven. So what are you waiting for?!
Makes 12 muffins
Ingredients:
3 large apples, peeled, and cut into small chunks
2 large eggs
120 ml oil (1/2 cup)
200 grams sugar (1 cup)
1 tsp vanilla extract
1/2 tsp cinnamon
210 grams self-raising flour (1.5 cups)
1/3 cup chocolate chips
Preparation:
1. Preheat an oven to 180°C.
2. Put all the ingredients in one large bowl and mix until combined.
3. Bake in a muffin tin or individual muffin cups for 20 minutes or until the muffins are golden.
