Marbled muffins recipe

It’s such a pleasure to start the week with something sweet and tasty. I love making these easy muffins that are ready in 20 minutes. Guests on the way? Kids craving something sweet? These come together in a flash and fill the kitchen with the most amazing aroma. Let them cool for a few minutes and then dig in!

Makes 14 muffins


100 grams butter that has been left at room temperature for around 15 minutes
200 grams sugar (1 cup)
3 eggs
120 ml whipping cream (1/2 cup)
1 tsp vanilla extract
250 grams self-raising flour (2 cups minus 3 Tbsp)
1 heaped tsp chocolate drink mix powder (like Nesquik)
1 Tbsp chocolate spread


1. Preheat an oven to 180 degrees Celsius.

2. Place the butter and sugar in the bowl of a mixer and cream together with a paddle attachment on high speed for around two minutes. Add the eggs, one at a time, on low speed. Add the cream and finally, the flour.

3. Take out 1/2 cup of the batter and add to it the chocolate drink mix powder and chocolate spread. Mix until well combined.

4. Grease a muffin tin and fill 3/4 full, starting with the light batter, followed by the dark batter, followed by the light batter. Swirl gently to create a marbled effect.

*5. Bake for around 20 minutes or until the muffins set and look golden.
