Baked Sweet Potato Latkes

The secret? It’s so simple: only 3 ingredients! Yes, that’s it. No long shopping lists and no stress. Even the kids will love them.

What makes these latkes so good? They are egg-free, so they are great for everyone. They are soft on the inside and crispy on the outside. I make them all the time because they always come out perfect. And the best part? No frying! Just put them in the oven and you’re done.

Ingredients:

700 -800 g sweet potatoes (2 medium sweet potatoes)
40 g flour (4 tablespoons)
1 teaspoon salt

Preparation:

 

1.Bring a pot of salted water to a boil. Cut the sweet potatoes into large pieces and cook for about 20 minutes until soft. Drain and wait a few minutes. Pour out any extra liquid so the sweet potatoes stay juicy and easy to work with.

  2. 3. Mash the sweet potatoes until smooth and add the flour. Add salt and mix well. With wet hands, shape into small latkes (about 45–50 grams each). Place them on the tray with some space in between.

  3. 4. Bake for about 40 minutes until they start to turn golden. Carefully flip them over and bake for 15 more minutes until golden brown on both sides.

    💦 Dry the sweet potatoes: This is the most important step. Make sure to drain the sweet potatoes well after cooking and remove all the extra liquid. The drier the mash, the crispier the latkes will be in the oven.

    👅 Taste before baking: Don’t wait until they are done! After adding the flour and salt, taste a tiny bit of the mash and add more salt if needed.

    🌶️ Easy flavor upgrades: To make it more interesting, you can add a little garlic powder or a pinch of cinnamon. It gives the latkes a great twist.
