Dairy-Free Cinnamon Rolls

Is there anything that can compete with the smell of chocolate babka that is baked in the oven?
A wonderful filling of cinnamon and sugar. The smell wafts through the house when the cinnamon rolls are being baked.
This sweet pastry goes by many names: Cinnabon, cinnamon buns and cinnabon rolls.
But at the end of the day, they’re all cinnamon rolls packed with delicious flavors, made from dough that rises easily.
Sometimes I take a bite of the cinnamon rolls, and it instantly pulls me back to my childhood — a little girl eating a soft cinnamon roll with chocolate milk — I never stopped smiling 🙂

30 Units

Ingredients:

550 g flour (4 cups less a tablespoon)
11 g dry yeast (tablespoon) / 25 g fresh yeast
A tablespoon of honey
40 g sugar (2 tablespoons)
A flat teaspoon of salt
2 egg yolks (yellow)
120 ml oil (half a cup)
180 ml pleasant water (3/4 cup)

Syrup:
180 ml water (3/4 cup)
100 g sugar (half a cup)

Cinnamon filling:
150 g butter / very soft butter
100 g brown sugar (half a cup)
50 g white sugar (less than a quarter)
3 flat tablespoons of cinnamon

Whipped egg

Preparation:

1. In the mixer bowl, put the flour, yeast and sugar, mix lightly and add the salt and the rest of the ingredients, using the sickle hook, turn on low speed to a smooth and soft dough.

2. Cover and let rise for about two hours until the onion doubles in volume.

3. Reduce the volume and divide the dough into three parts, you can divide in half to get larger rolls.

4. Prepare the filling:
Mix butter / butter, sugars and cinnamon into a uniform paste.

5. Roll out the dough into a thin sheet measuring 26X26, spread a thin layer of the filling and roll into a roll, if there is time, it is recommended to freeze for 30 minutes. Cut into thick snails, arrange in a pan and let rise for 15 minutes.

6. Prepare the syrup:
Boil water and sugar for a few minutes and close.

7. Another option for filling:
Brush the dough with butter, mix sugars and cinnamon and sprinkle on the butter.

8. Brush the sineroll with beaten egg and bake for about 25 minutes until they get a nice golden color, when leaving, brush the sineroll generously with the syrup.
